Tacos, enchiladas, burritos OH MY!

Taco Tuesday is never a day to complain about as there are so many ways to eat tacos. Fish tacos, beef, chicken, veggies... the list goes on! What is great about the Hot Logic is you can make a whole dish of enchiladas, keep your taco meat warm or heat up your food the next day. Since Mexican food can easily be ruined by reheating in the microwave making it dry or over cooked, why take the chance?

Here are three things that are recommended by Hot Logic users.

Chicken shreds very easily after cooking in the Hot Logic. Add some raw chicken breast and taco seasoning. Let it cook as long as you want. Open it up, shred it, and add it to a taco shell with your favorite toppings.

User Lisa heated up her taco meat and added it to a tortilla topped with home made salsa, cheese and sour cream.

User Katie shared an awesome recipe on our Hot Logic Recipe page and these looked wonderful!

  • 1/2 package flour tortillas
  • 3/4 pound cooked chicken
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can cream of chicken soup
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 package shredded cheese
  • Handful fresh spinach
  • 1/2 small onion, finely diced

After cooking the chicken and onions, Katie shredded her chicken in the food processor. Add the shredded chicken to a warm skillet with 1/2 cup water and taco seasoning, mix well. Shred the spinach in the food processor, add to the chicken mixture, add 1/2 the shredded cheese and 3 tablespoons of the cream of chicken soup.

In a medium bowl, combine the sour cream, use 2 tablespoons of the soup Enchilada 1mixture and evenly spread it over the bottom of the dish.

Take a flour tortilla and scoop some of the chicken mixture onto the center and roll the tortilla. Repeat until the baking dish is full. Take the remaining soup mixture, spread it over the top of the filled tortillas, cover and set in the Hot Logic.

Katie let her enchiladas cook for 5 hours but she said they were ready to eat after only 2.

Her finished product looked great and could clearly feed a family if needed.
