Italian Chicken

A satisfying lunch or dinner for one, this recipe comes together quickly to cook from scratch in a Mini.  


  • 1 Chicken Breast
  • Salt
  • Pepper
  • 2 Tbsp Italian Seasoning
  • 1 Slice Mozzarella Cheese
  • ¼ C Mushrooms, thinly sliced 
  • 1 Small Zucchini, sliced 
  • 6 Cherry Tomatoes, sliced
  • Fresh Basil


Place the chicken breast into your container. Season well with salt and pepper. Cover the chicken with thinly sliced mushrooms and zucchini. Sprinkle 2 Tbsp of dry Italian Seasoning onto the vegetables, and season with salt and pepper. Add the sliced mozzarella cheese on top along with 2 basil leaves. Cover your dish and cook in your HOTLOGIC(R) Mini for at least 2 hours, or until the internal temperature of the chicken is 165 degrees. Garnish with fresh basil and tomatoes.
