This easy and delicious recipe uses our Mini to cook flavorful stuffed chicken.
- 2 Chicken Breasts
- 1 Artichoke Heart from a can, finely diced
- 1 tsp Garlic Powder
- 1/4 tsp Salt
- 1/4 tsp Pepper
- ½ tsp Paprika
- 2 Tbsp. shredded Swiss Cheese
- ¼ cup Spinach, finely chopped
- 1 Tbsp. Breadcrumbs
In a small bowl combine the artichoke, garlic powder, salt, pepper, paprika, cheese and spinach, stir until well combined.
Cut each chicken breast in half longways so you have two thin halves. Lay all 4 pieces between 2 sheets of plastic wrap, and pound with a meat tenderizer until the chicken is very thin.
Scoop about 1 tablespoon of the spinach artichoke mixture on the chicken and spread it to coat the chicken. Roll each piece of chicken so the mixture is in the inside and hold in place with toothpicks.
Place your chicken rolls in your dish, sprinkle with breadcrumbs, cover, and place in your HOTLOGIC(R) Mini.
Cook for at least four hours or until the internal temperature is 165 degrees.
